Dishes for social gatherings

Garden parties and other outdoor social gatherings are about delighting guests while enjoying the event yourself. Go for hot weather recipes that tick both boxes.

Chilled pea and mint gazpacho with crab ceviche

As fresh as spring, this gazpacho (cold soup) dish will impress your guests with its rich green colour.

  1. Lightly blanch sweet seasonal peas, then blend with cucumber, olive oil, a little garlic and a good handful of mint, along with a drizzle of olive oil and a squeeze of lemon juice.
  2. Just before serving, top with a spoonful of crab ceviche, which is a simple mixture of crab meat, salt, and a squeeze of lemon or lime juice.

Wow factor: Serve in small cocktail glasses to add a visual element that will have your guests torn between taking photos and digging in.

Roasted summer vegetable terrine with red pepper chutney

Rustic and wholesome, terrine also shows culinary flair.

  1. Use roasted seasonal veggies like aubergine, courgette and red peppers, cooked until soft and slightly caramelised.
  2. Mix the softened vegetables with a soft cheese like goat’s cheese or ricotta, together with lemon zest, a little garlic, and herbs such as basil, parsley or thyme.
  3. Place the mixture in a loaf tin and chill overnight ready for your party the next day.

To make your chutney, simmer skinless roasted peppers, sautéed garlic and onion, red wine vinegar, and a touch of salt and sugar.

Wow factor: Sprinkle a rough scattering of chives over your terrine to look like cut grass.

Perfect picnic recipes for hot weather

Picnics can be about simple sandwiches or grand occasions where finding the right spot feels as important as house hunting. These picnic recipes for hot weather cover all bases.

Mezze picnic platter

Spread your picnic blanket and lay out an irresistible combination of crunchy veggies and flavour-packed dips. Plunge cucumber sticks, cherry tomatoes and baby carrots into hummus or tzatziki – a creamy Greek dip made with strained yoghurt, grated cucumber, garlic, salt, olive oil and lemon juice, plus fresh herbs like dill and mint. Olives, pita bread and feta or halloumi cheese complete the picnic picture.

You can make your own hummus by simmering tinned chickpeas for 20 minutes, then blending with a clove of garlic and roughly equal proportions of tahini (sesame seed paste), lemon juice, olive oil and cold water, plus a pinch of salt.

Ratatouille and goat’s cheese quiche

This hot weather recipe lets you enjoy some baking before your picnic.

  1. Make your shortcrust pastry first, starting with a crumbly flour and cold butter mixture, then add salt and just enough cold water to form a dough. Chill in the fridge for 30 minutes, then dust with flour, roll flat and shape around your quiche tin.
  2. For the ratatouille, roast courgette, aubergine, bell peppers and any other favourite seasonal veggies for 20 to 30 minutes, adding tomatoes and fresh basil towards the end.
  3. For the quiche base, blind bake at 190°C for 25 minutes or until golden.
  4. Fill the base with the vegetables, as well as crumbled goats cheese, caramelised onions and sautéed spinach, and pour over a savoury custard made with whisked eggs, heavy cream, salt and pepper.
  5. Bake for another 35 minutes, then cool for your picnic basket.

If you're on holiday in France, choosing picnic treats from a boulangerie or fromagerie is a cultural experience. Consider staying at Novotel Amboise, where you can head into town to pick up supplies, then drive out to Loire Valley picnic sites.

Summer smoothie ideas

A fun way of getting kids to eat well, smoothies are quick, easy and full of flavour.

Strawberry, watermelon and mint smoothie

A celebration of summer, strawberry, watermelon and mint smoothies are hydrating and refreshing on warm days. Use ripe strawberries, chilled watermelon (seeds removed) and fresh mint, and consider adding in coconut water for even more hydration thanks to potassium and other electrolytes.

Wow factor: Turn your strawberry, watermelon and mint smoothie into a mocktail by using sparkling water instead of coconut water, adding a splash of lime juice and serving over ice.

Apricot, peach and almond smoothie

Get a sweet energy boost with this summery smoothie using fresh apricots and juicy peaches. Use regular or almond milk, and throw in a handful of almonds to add depth. Enjoy with some of your other hot weather recipes – savoury quiche pairs especially well with sweet drinks.

Good to know: Mocktails are not supposed to contain any alcohol, and making them yourself ensures you have control over the ingredients. If you buy from a shop, check the ingredients for small amounts of alcohol.

Easy summer dinner recipes for families

Family dinner ideas for summer should be simple, leaving everyone enough time to enjoy being outside. Even simple recipes can be creative, letting kids get involved.

Chicken shish kebabs

These skewers of meat and veg are fun to make and easy to cook. They're also very versatile: for a meat-free option, swap the chicken for halloumi or mushrooms. Or how about a rainbow-inspired veg combo with red onion, peppers, sweetcorn, courgette and aubergine?

  1. Dice chicken into 2-cm cubes and add to a marinade of finely grated garlic, yoghurt, paprika and tomato paste. Stir to coat and set aside for at least 20 minutes, or up to two days.
  2. If using wooden skewers, soak them in water for an hour. Thread the chicken, along with chopped peppers and onions, onto the skewers, alternating as you go.
  3. Grill or BBQ for 10 minutes or until the chicken is cooked through.
  4. Serve with warm flatbreads, a chopped tomato salad and lemon wedges.

Grilled lemon-and-herb salmon with niçoise salad

Coat salmon fillets with olive oil, lemon juice and dill or parsley, then grill in the kitchen or on the BBQ. The light marinade brings out the fish's natural flavours. Originating in the French city of Nice, niçoise salad is a combination of ripe tomatoes, hard-boiled eggs, potatoes and olives, plus either tuna or anchovies. Additions include crunchy lettuce, blanched green beans or basil. Variation is the attraction here – lay out the different ingredients so that everyone can build their own salad based on their preferences.

Healthy summer desserts

The best dessert recipes for hot weather stick with the theme of being light, healthy and fun. Naturally, such desserts include plenty of fruit.

Lemon and thyme sorbet

This summer dessert is a bright, citrussy sorbet with sophisticated notes of thyme.

  1. Dissolve 160 grams of sugar in 250 ml of hot water, then add a few sprigs of thyme to infuse the syrup.
  2. Cool and remove the thyme, then mix in 140 ml of fresh lemon juice.
  3. Churn in an ice cream maker or pour into a shallow container and freeze for up to four hours, stirring every hour until it is smooth and scoopable.

Apricot and honey parfait

A parfait is a chilled, creamy dessert usually topped with something textured. This one uses the crunchiness of nuts, but you can also use fruit or granola.

  1. Chop a handful of apricots and poach them with 2 tbsp of honey until soft.
  2. Once cooled, fill glasses with alternate layers of the apricots and natural yoghurt, drizzling in honey as you go, and chill in the fridge.
  3. Just before serving, add a crunchy topping of chopped walnuts, pistachios or toasted almonds.
